4 Healthy and Easy Make Ahead Breakfasts for Busy Mornings

I am so not a morning person. I sometimes get out of bed, and I’m out the door 10 minutes later because I get every second of warm comfyness in my bed as possible. That means I never make myself breakfast before I leave for work which leaves me with two options: run through a drive-thru or don’t eat (ha – I will eat).

I would much rather grab something healthy out of my fridge than spend money on something that might not be as healthy – that adds up! Calories and money. 😉

Over the last three years or so I’ve really stuck to a small handful of grab-n-go breakfasts. I wouldn’t recommend eating these while driving, but they’re perfect for at your desk or on the subway/bus/train!

Vanilla Overnight Oats

  • 1/2 cup of quick oats
  • 1/2 cup of Silk vanilla almond milk unsweetened
  • 1/2 cup of Chobani vanilla blended greek yogurt
  • 2 tablespoons of chia seeds
  • 1 squirt of honey

Mix it all up! Add any toppings either in the morning or after you’ve mixed the above ingredients.

This is hands down what I make the most when I prep my breakfasts. If you have smaller containers or mason jars, they would be perfect for putting together overnight oats. The best part is you can customize this to whatever you’re feeling that day. Want a scoop of peanut butter? Plop it on there! How about berries? Throw em in there. I often do either one of those.

Vanilla Latte Shakeology

  • 1 scoop of Vanilla Shakeology
  • 1/2 cup of Silk vanilla almond milk unsweetened
  • 1 cup of coffee
  • 1 squirt of honey
  • Some ice cubes

Blend ‘er up! You can also shake this up, especially if you have a bottle with a blender ball in it, but there may be some small chunks of powder in it.

The honey gives this shake a sweet taste, but not too sweet. There are lots of Shakeology recipes out there, so if this one doesn’t float your boat, Pinterest is a great resource for finding more! My coworker is awesome and sold me a bag for cheap, so I have been adding this to some of my mornings.

Ham & Egg Cups

  • 6 ham deli slices
  • 6 eggs
  • About 3/4 cup of shredded cheese
  • Optional
    • Green onions
    • Other seasoning
    • Spinach
    • Tomatoes

Let’s pretend you’re using a six muffin tin for this. These are super easy! Preheat the oven to 325°. Place a slice of ham in each space in your muffin tin followed by a sprinkle of cheese (the 3/4 cup will be split up between the six spaces). After that, you’ll crack an egg into each muffin tin space. Season with salt, pepper, and any other spices you like. I sometimes add spinach, diced tomatoes, and/or diced green onions. It depends on what I have and how lazy I feel. Put them in the oven for about 12 minutes and let cool before putting into containers.

I eat two each morning, so this is three days worth of prep. One thing I’ve found with these egg cups are that you really shouldn’t let them sit for longer than 3-4 days. They start to get a little suspect.

Sweet Potato Toast with Peanut Butter

  • 1 sweet potato – get a big ‘ol tall and fat one
  • Peanut butter – I prefer chunky 😉

Preheat the over to 400°. Carefully slice your sweet potato into slices. The thinner your slices, the better your toast will bake. I put a little bit of olive oil on them, but not a ton. Put them in the oven for like 15 minutes. Take them out and let them cool completely. After they’ve cooled, put 2-3 slices in containers. If you save the plastic Chinese takeout containers (you totally should), these are perfect! Put them in the fridge for now!

Here’s what I do in the morning.

I take out a container and throw each slice in the toaster. I continue getting ready while it toasts. Sometimes I run it twice to get them nice and hot (they don’t burn with just two toasts, but keep an eye on them the first couples times you do it). Before I leave, I put them back in the container with a plop or two of peanut butter. By the time I get in the office, the peanut butter is nice and melted and the sweet potato toast is still warm (it takes me 7 minutes to get to work 🙂 ). I was super skeptical of this being a breakfast meal, but omg. It’s so good. It’s probably my favorite even though it’s the one I make the least – I don’t know why I don’t make it more.

One of the biggest things for me when staying consistent in healthy eating is meal prepping and making sure that I am not eating out every morning. If I either don’t have time or simply don’t make any of the things above, I love to grab a greek yogurt, Chobani flip cup, a hearty blueberry oatmeal from Starbucks, or a yogurt bowl from a local coffee shop across the street from work. If we have them, I will add berries to pretty much all of that too. But holy man. Berries are expensive AF around here. But I do love me some good blackberries on greek yogurt.
